Baked Oatmeal
Directions:
Night before:
Mix oatmeal, yogurt and water in large mixing bowl. Cover with a cloth and let it set on the counter until morning.
Next morning:
Add the rest of the ingredients except the fruit and mix very well – no need for a mixer – I use a wisk and spatula. Now, fold in your fruit then pour into a greased 9x13 baking dish and bake at 350º for 40 – 50 minutes. Serve warm – but it’s great leftover too!
Topping:
2 C Ricotta cheese
2 Tbs powdered sugar
mix these together and place a nice dollop on your baked oatmeal.
Our favorite version is with blueberries. Then we add a little lemon extract to the ricotta topping. The lemon and blueberry combination is fantastic! We also enjoy it with peaches, apples and even apple sauce!
Health Tip: I have cut the oil in half and substituted melted coconut oil for vegetable oil and it turns out great!
