Basic Granola

Ingredients:
10 cups rolled oats
1-2 cups chopped walnuts
1 ½ tsp. salt
2 cups brown sugar
2/3 cup honey
½ cup melted coconut oil (or vegetable oil)
½ cup almond butter (or peanut butter)
1/3 water
2 tsp. vanilla extract
Directions:
Preheat your oven to 325 degrees. Combine oats, chopped nuts, and salt in a large bowl. In a medium saucepan, mix brown sugar, honey, oil, almond butter, and water. Bring to a simmer over low heat, stirring continuously.
Once the mixture is simmering, remove from heat and stir in vanilla extract. Then pour honey mixture over the oats and stir until everything is evenly combined. Pour granola into a large baking pan (or cookie sheet) and bake for 60 minutes – make sure to stir mixture about every 20 minutes of baking time. Allow granola to cool completely. Enjoy!
Variations:
Orange Pecan: Replace walnuts with pecans, and vanilla extract with orange extract. Add 2 tbsp. of grated orange extract to the honey mixture while over heat. After granola has baked and cooled, mix in 1-2 cups of dried cranberries.
Apple Cinnamon: Add 1 tbsp. cinnamon to the oats mixture. Replace almond butter with ½ cup applesauce.
Peanut Lover: Replace walnuts with salted or honey roasted peanuts (if salted, then omit the 1 ½ tsp. salt). Instead of almond butter, use ½ cup peanut butter. If desired, after granola has baked and cooled completely, stir in mini chocolate chips.
Piña Colada: Add 1-2 cups of coconut flakes (can be either sweetened or unsweetened) to the oats mixture. Replace water with 1/3 cup pineapple juice. After granola has baked and cooled, mix in 1-2 cups of dried pineapple pieces.
