Fluffy Whole Wheat Bread
Ingredients
1 tablespoon active dry yeast 2 cups warm water (110º - 115º) 2 tablespoon EVAPORATED CANE JUICE (or granulated sugar) 2 tsp. REAL SALT (or regular table salt) 4 cups UNBLEACHED WHITE FLOUR ½ cup hot water ½ cup BROWN SUGAR 3 tablespoons COCONUT OIL, (or shortening) 4 cups WHOLE WHEAT FLOUR |
Add active dry yeast, warm water, and cane sugar to mixing bowl and give a quick stir to help dissolve sugar. Add white flour and salt, mix until smooth then cover tightly with plastic wrap for one hour until mixture is light and bubbly. This may take less time depending on the temperature of the room.
Combine hot water, brown sugar, and coconut oil (tip-I melt the coconut oil then add the brown sugar and hot water). Stir to melt/dissolve coconut oil and sugar. Cool to lukewarm. Add to bubbly flour mixture. Add whole wheat flour to mixture, mix then knead for 10 minutes until smooth. (this can all be done in a mixer - just keep on low for a minute or two until the ingredients are well combined then turn up to medium for another 8 minutes or until the dough is smooth and springs back).
Place the dough into a lightly greased bowl, turning once to coat surface of dough. Cover with plastic wrap and let rise in warm place until double in bulk.
Punch dough down, divide in half, shape into balls and let sit for 10 minutes - just throw the plastic wrap loosely over them so they don't dry out.
Using a rolling pin, roll dough into 10 x 14 inch rectangle, roll dough toward you forming a log (like a jelly roll), seal ends and tuck them underneath then place into two lightly greased bread pans. Cover loosely with plastic wrap and let sit in a warm place until double in bulk (this takes 30-60 minutes depending on the temperature of your room. AT this point, preheat your oven to 375 degrees with the rack positioned in the middle.
Bake at 375º for 50 minutes or until internal temperature is 200º
Immediately after taking out of oven, brush tops with melted butter and cover with an old, clean dish towel (it will get grease stains!) and let cool completely in pans. When cooled, remove from pans and ENJOY!
