Mom's Best Shortcake
Preheat oven to 375º
Use non-stick spray and grease a 9” round pan or 8” square pan
Combine dry ingredients
Cut in butter with pastry blender until you have the consistency of course cornmeal
Wisk together the milk and eggs then add to dry ingredients.
Gently stir just until the dry ingredients are moistened. It’s very important here that you don’t overmix.
Spread dough in your prepared pan. It will have the consistency of thick brownie mix.
Bake for 25 – 30 minutes or until a toothpick inserted comes out clean.
When ready to serve, cut cake into wedges and slice the wedges in half through the middle giving you a top and bottom. Lay the bottom on the plate and place a dollop of whipped cream in center. Then, place a scoop of strawberries. Place the top layer on top then repeat with more cream and strawberries.
